Born from a Simple Frustration

Traveling through Japan as a vegan often means missing out on the country's rich food culture. After meeting over 100 vegetarian and vegan travelers, we kept hearing the same story: "I want to enjoy Japanese food, but I end up eating convenience store rice balls."

Vegan Sushi Tokyo was founded to bridge that gap. Led by Shu Kudo, we bring together traditional sushi artistry and 100% plant-based ingredients—right here in Shibuya.

Shu Kudo

Founder & CEO

Shu adopted a vegan lifestyle in 2016 while still in high school, driven by animal ethics and environmental concerns. At the time, finding vegan options in Japan was a daily challenge.

In 2020, he founded the company with a mission to create a "Hello Vegan!" society where everyone can choose plant-based. After meeting over 100 vegan travelers struggling to find authentic Japanese cuisine, Vegan Sushi Tokyo was born in 2023.
